Vegetable Briyani

Simple and easy tasty veg biryani ready in 30 minutes

Let 2 cup basmati rice sit in water

Add Oil in a vessel, add 1 cinnamon stick, 2 elachi, 5 cloves, 1 Annansi Mokku and add 1 Medium size onion slit lengthwise. Let the Onion fry very well and add Ginger-Garlic Paste ( 6 Garlic Pods, 1 Inch Ginger) and add 1 Handful Chopped Mint leaves and saute it until the green smell is gone.

Add 1 Tomato, 1 Carrot, 5 Beans, 1 Potato chopped big and add it to the mixture. Add 1/4 cup curd , 1 tbsp Chilli Powder and 1 pinch Garam Masala and let it cook well. Add little Curry leaves and little Coriander leaves at the end.
Add the soaked rice and saute it well until the rice is hot. Add the briyani mixture into a cooker and add water (2 times the cup of rice) and let it cook. 

Briyani ready. Serve it hot with Raita.

Chettinad Egg Kulambu - Egg Kurma

Chettinad EGG Kulambu.

Let sputter Mustard/Urad dal in oil in a frying pan. Add Curry leaves.
Add 2 Cinnamon sticks/3-4 Cloves/2 Elachi.
Add 10 Chopped Garlic (You can use GingerGarlic paste instead too.)/ 1 Onions and sautee it till it is golden brown
Add 1 Tomatoes and fry it well.
Add 1 spoon chilli powder/1 spoon Coriander powder/Turmeric powder with little water..Stir for two minutes.
Add the ground mixture and add water to your need.
Let it boil for some time.
Break open a egg (like u do for half-boil) and let it slide in the boiling mixture. It will boil on its own in medium heat. Do not stir the mixture after adding the egg.
Add some coriander leaves in the end.

Boil three eggs in a water in a seperate vessel. Cut the boiled egg vertically into half and put inside the kulambu. Let stand for sometime before you serve.


To grind :
Coconut : - 1 small cup - 2 medium pieces should be enough for kulambu.
Fennel (Sombu) - 10-15
KhusKhus - Little - If not available , tht's Ok
Add-Ons..
# Have with rice - Beetroot/Beans/carrot/Keerai Poriyal on the side will add taste to this combination.
# Goes well as PAROTTA - KURMA
# Add more cocunut to get EGG KURUMA if needed.
# You can grind sautee'd Onion/tomato also before adding coconut to make it semi-gravy to have with Roti/Chappathi.
# It can be done in 30 minutes - Simple & Easy and will go with Rice/Roti/Parotta/Dosa.
